Calcium Propionate (CAS No. 4075-81-4) is the calcium salt of propionic acid, typically produced as a white crystalline powder or granulate. It is technically valued for its potent antimicrobial and antifungal properties, specifically against mould and "rope" bacteria. Highly soluble in water with a melting point of approximately 300°C, it remains stable under standard industrial processing conditions. As a "clean label" preservative, it functions effectively at low concentrations without altering the flavour, texture, or appearance of the final product, making it an essential reagent for high-volume commercial production.
In the food and beverage industry, Calcium Propionate is the gold standard for extending the shelf life of yeast-leavened bakery products, including bread, rolls, and pastries. It is also widely utilised in processed dairy, whey products, and certain meat formulations to prevent fungal spoilage. Beyond human consumption, it serves as a critical additive in animal feed and grain silage, where it acts as a preservative to maintain nutrient quality and prevents the development of harmful toxins during storage.
In the pharmaceutical and personal care sectors, this compound is employed as an antimicrobial agent in topical creams and specialised medicinal formulations. It is also used in the manufacture of certain plastics and butyl rubber as a stabilising intermediate. In agricultural contexts, it is leveraged for its high bioavailable calcium content (approx. 21%), doubling as a nutritional supplement to support bone health and metabolic function in livestock, particularly in dairy cattle and poultry farming.
